| Sock-It-To-Me Cake Recipe |
Things Needed:
~ 1 package butter cake mix(18.25 oz.)
~ 1 cup sour cream
~ 1/2 cup vegetable oil
~ 1/4 cup white sugar
~ 1/4 cup water
~ 4 eggs
~ 1 cup chopped pecans(optional)
~ 2 tablespoons brown sugar
~ 2 tablespoons ground cinnamon
~ 1 cup confectioners' sugar
~ 2 tablespoons milk
Directions:
~ Preheat oven to 375 degrees F.
~ In a large bowl, blend together cake mix, sour cream, oil, white sugar, water, & eggs. Beat at high speed for 2 minutes or mix thoroughly.
~ In a small bowl, combine pecans, brown sugar, & cinnamon.
~ Grease & flour one 10-inch bundt pan.
~ Pour 1/2 of the batter into the prepared pan.
~ Sprinkle the brown sugar mixture over batter in pan, then spread the remaining batter evenly over filling mixture.
~ Bake at 375 degrees F for 45-55 minutes until the cake springs back when touched lightly. Cool right side up in pan for about 25 minutes.
~ Mix together confectioners' sugar & milk.
~ Remove cake from pan & drizzle with glaze.
Ren's Recommendations:
~ Depending on the size(width) of your bundt pan, you may not need all of the filling mixture. Save whatever's left over and sprinkle it on top of the batter before you bake the cake. It'll give you a bit of the mixture through the middle of the cake & the bottom once it's finished.
~ I usually flip the cake onto a plate before it's completely cool. It helps the glaze to melt over the cake a bit which seems to work better for me. You can leave it in the pan to cool, but sometimes it can be a tad tricky to drizzle the glaze over it once the cake is completely cool. This is more of a personal preference though. Whichever is easiest for you is what I would go with.
